Energy Bites.

I am always on some type of go mode, with 2 young boys there is really no time to just sit. Somebody is always hungry, thirsty, throwing a tantrum, etc..
When it comes to snacks, I need them to be healthy, easy, and quick! These little energy bites are just so simple it’s almost a joke.
Not only are they fast to make but they pack a punch of flavor! Also, you can pretty much toss whatever you want/have on hand into these bites.. Don’t be afraid to mix up flavors!

Take it from me, trying to please 3 different sets of taste buds isn’t always easy! My fiancé can be picky and my two boys have no problem letting me know if they don’t like something.. & all of them loved this snack!

Make some yourself and see what the rave is over these little energy bites.

Ingredients:

1 cup of dry oats
2/3 cup of coconut flakes (not sweetened)
1/2 cup of of peanut butter
1/3 cup of trader joes cookie & cocoa swirl
1/2 cup of flax seeds
1 tbsp of chia seeds
1 tbsp of honey
1/2 tbsp of cocoa powder
2 large dates (cut up)
Handful of raisins

Directions:

1. Put all of the ingredients into a large bowl and stir everything together until well mixed.
2. Place in refrigerator for 20-30 minutes.
3. Remove from refrigerator and take little handfuls of mixture and form into 1″ balls.
You can eat them as soon as you finish rolling but I like to let them chill an extra 10 minutes before enjoying.
